Easy Zucchini Bread Recipe

We love late summer and fall because of ZUCCHINI! In fact, a neighbor just gave us some fresh zucchini from their garden. Nothing better than that! Of course, the first thing we thought about making was zucchini bread! There’s nothing like warm freshly baked zucchini bread. The zucchini was so large we were able to freeze some of it for later use. We hope you’ll enjoy this easy recipe for delicious zucchini bread! Mmmm!

Zucchini Bread Recipe

Ingredients:

  • 2 cups white sugar
  • 1 cup vegetable oil
  • 3 large eggs
  • 2 cups zucchini, grated
  • 3 cups flour
  • 3 tsp cinnamon
  • 1 tsp baking soda
  • 1/2 tsp baking powder

Step 1: Shred zucchini using a cheese grater.

Tip: you can freeze leftover zucchini. Measure out 2 cups and place in a ziploc bag.

Step 2: In a bowl add flour, cinnamon, baking soda and baking powder. Mix. Set aside.

Step 2: In a separate bowl add sugar and oil together in a mixing bowl. Mix using a handheld mixer or a KitchenAid.

Step 3: Add eggs to the mixture and mix until blended.

Step 4. Add zucchini. Mix until blended.

Step 5: Gradually add the flour mixture. Mix until completely blended.

Step 6: Equally add mixture to two loaf pans. Bake at 350 degrees for 1 hour or until an inserted toothpick is clean when removed.

Step 7: Let cool on wire rack.

You can also use mini loaf pans to package and give the loaves as gifts.
